Blackened Catfish, Basmati Rice, Veggies and Black Eyed Peas. This soul food tastes great and is good for you too! The veggies play a great background role to the smokey savory catfish.

Blackening is a popular cajun cooking technique where the filleted catfish is coated in a mixture of herbs and cajun spices and then seared on a cast iron skillet which gives it its characteristic crust.

Good portion, but I have to agree with a previous reviewer that said the fish was too salty.

Great flavor. A bit salty. Veggies are a great accompaniment. Rice is superfluous with the beans and veggies.
