A casserole of seasoned ground beef, roasted tomatoes, peppers, squash and potato, with a top layer of bechamel baked till golden.
Comfort foods are so much fun to cook. I treat them like a blank canvas and add flavors that represent my roots or my experiences from travelling. Here I add cumin powder while sautéing the beef to complement the heartiness of the meat. Cumin is widely used in Nepali cuisine in curries and other spice blends. I like crumbling feta cheese over the crust for that added saltiness.
