Chow mein was brought by the Tibetans to Nepal and has become one the most popular local dishes. You’ll find it made in almost every home and sold from food carts across the country.
I used minced ginger in the meatballs to add freshness and sesame seeds for earthiness. Ginger is a good digestive and helps when combined with the fattiness of pork. When building strong flavors in the meatballs, I like to keep my noodles fairly simple. Red peppers and scallions are stir fried with the cooked noodles.
