Vegan stuffed bell pepper filled with a delightful mixture of rice, walnuts, apples, and herbs. Served with roasted rosemary red potatoes and fennel carrots.
Stuffed Bell Pepper (bell pepper, rice, Walnut, apple, Onion, Celery, Carrot, Garlic, Parsley, olive oil), potatoes (red potato, rosemary), fennel carrots (baby carrots, butter, toasted fennel seed)
All three entrees (Squash, Chicken Breast and Pork Chop) were delicious. Overall, the proportion of carrots was unusually high for the meal (more than twice what was eaten/needed)
