Farro is a delicious ancient grain with a light, nutty flavor and satisfying chew. The grains are mixed with roasted butternut squash, chickpeas and cauliflower. The farro is then tossed with sunflower seeds, lemon, and parsley, for a dish that is filling, earthy, and satisfying. Served with grilled asparagus.

This salad was amazing! the butternut squash added a little sweetness to this hearty dish, that our vegan employees loved as well as non vegan.
Great meal all around and portions were spot on.
