Description

This is a delicious seasonal dish with healthy fresh ingredients. I season this hash with garlic, cumin, and herbs.

Ingredients

hash (seasonal squash, yam, onion, pickled red onion, scallion, olive oil, red and green bell peppers, garlic, cumin, lemon juice), polenta (cornmeal, herbs, chili flake), seasonal vegetables (seasonal vegetables, oil, salt, pepper), roasted potatoes (potato, canola oil, spices)

We only received one half pan of this and then several half pans of plain steamed vegetables and one half pan of just polenta. The hash was a big hit but the other dishes were said to be pretty bland.

The hash was very delicious. My only comment would be that the polenta mushed together in transit. It might be better to not even cut it, and just treat it as polenta "pudding" that people spoon up like mashed potatoes.

Wow what flavor. Polenta was not tasteless, I was worried it would be.
The Hash had great flavor strength.

This was a delicious vegetarian meal. The flavors were wonderful and I added a side of greek yogurt for dipping.

Good flavor. But veggies were over cooked a bit and the yams or squash were mashed. Not what I was expecting but still good overall.

The acidity of the onions balances really well with the sweet squash. Polenta left something to be desired, works fine as the base for the dish but didn't contribute that much to me.

This was absolutely delicious. Would only have been better without green peppers which my stomach doesn't like. However, they do add a flavor that is great!
