Prime brisket slow smoked for over 10 hours with hickory and applewood. Seasoned with my hand crafted signature spice rub and homemade bbq sauce. Served with a side of macaroni and cheese, a creamy blend of cheddar, colby jack, and parmesan cheeses.
The dish is finished off with my version of Texas caviar; a pico de gallo style salad with black beans, black-eyed peas, tomatoes, corn, onions, jalapenos, and green peppers in a vinaigrette style dressing. A cheddar biscuit and quick dill pickles, onions and jalapenos accompany the meal.
