I have a special affinity to the simple mediterranean flavors that I fell in love with while traveling. I love how the use of a few flavors highlight or complement the main ingredient of this dish. A stark contrast to the spiced and fragrant Nepalese dishes that I grew up eating.
On days when I need a refreshing meal I love making this roasted chicken marinated in garlic and lemon juice. I complement this with orzo cooked with fresh herbs to emphasize the bright flavors across the dish.
