I believe that vegetables don't have to be boring. Instead they need thoughtful consideration. I intensify the vegetable flavors by slow roasting, adding a new dimension. The handmade pasta is the star of this dish, accompanied by the bold vegetables. Many people enjoy my veggie lasagna just as much as my meat lasagna, or dare I say more.
