These authentic chicken enchiladas with mole sauce were inspired by grandma's mole recipe that takes two days to complete. Chocolate, nuts, and dried chiles make a rich and flavorful sauce that tops the moist and tender chicken enchiladas. Served with Mexican rice and refried beans, tortilla chips, pico de gallo and sour cream.
