A classic Mexican dish. In their original form as Mexican street food, enchiladas were simply corn tortillas dipped in chili sauce. Now they come stuffed with many different fillings. I make mine with chicken and fresh vegetables in a red salsa.

  • ⓞ Oven 350F, 12-15 min uncovered
  • ⓜ Microwave 2-3 min
  • Heat in oven for best results

enchiladas (chicken, bell peppers, onion, cilantro, green onion, cumin, fajita seasoning, flour tortillas, monterey jack cheese), salsa roja, (tomato sauce, cilantro, lemon juice, ancho chili, cumin), Mexican slaw (cabbage, radish) slaw dressing (apple cider vinegar, lime juice, spices)

DELISH! I absolutely loved this dish. The sauce was so flavorful and just the right amount of heat, loaded with plenty of chicken and veggies. The salad paired with it was a very nice light and flavorful side to go with it. I would definitely order these again. :)

I could eat five more of those salads, and the dressing. The enchiladas are good, you can tell the ingredients are fresh and you get a lot of chicken AND vegetables in the dish, but it's surprisingly light. I'll order it again, but I'll "fatten it up" with a little more cheese and maybe a bit of sour cream.

Felt the seasonings were mild and unremarkable - generic and I enjoyed the salad dressing the most!
