Farro is a delicious ancient grain with a light, nutty flavor and satisfying chew. The grains are mixed with roasted butternut squash, chickpeas and cauliflower. The farro is then tossed with sunflower seeds, lemon, and parsley, for a dish that is filling, earthy, and satisfying. I serve it with a spinach salad with dried cranberries and oranges, for a bright counterpart.

Delicious! Great flavor and texture providing a satisfying vegetarian entrée.
This time around this dish was very bland. I poured some of the dressing for the spinach salad on the farro dish, but it didn't help much. It was like someone forgot the seasoning.
