Description

Farro is a delicious ancient grain with a light, nutty flavor and satisfying chew. The grains are mixed with roasted butternut squash, chickpeas and cauliflower. The farro is then tossed with sunflower seeds, lemon, and parsley, for a dish that is filling, earthy, and satisfying. I serve it with a spinach salad with dried cranberries and oranges, for a bright counterpart.

farro, roasted veg and squash (cauliflower, butternut squash, paprika, red pepper flakes, parsley), spinach salad (spinach, orange, cranberry, sunflower seeds), vinaigrette (oil, salt, pepper, sherry vinegar, mustard, lemon)

Delicious! Great flavor and texture providing a satisfying vegetarian entrée.

This time around this dish was very bland. I poured some of the dressing for the spinach salad on the farro dish, but it didn't help much. It was like someone forgot the seasoning.
