French ragout with basil pesto (or pistou as they say en francais!). Paired up with roasted vegetable medley and mixed greens salad with Dijon vinaigrette.
ragout (red and white beans, green beans, carrots, leeks, potatoes, basil, tomatoes, potatoes, olive oil, salt, pepper), roasted vegetables medley (potatoes, tomatoes, zucchini, carrots, onions, herbes de Provence, olive oil, salt, pepper), mixed greens salad (mixed greens), Dijon vinaigrette (Dijon mustard, red wine vinegar, olive oil, salt, pepper)
This was good - should have been a side for the not vegans too.
In general, way too much arugula, and not enough non-meat stuff
