Coming from an Italian and Serbian family, Aleks's culinary journey began at an early age, standing on chairs to help stir. He went on to work professionally in top end restaurants in Spain, Germany before opening La Bete and later Spaghetti Western in Seattle.
A delicious vegan riff on a hearty batch of beans... don't be deceived! This chili packs plenty of flavor from, herbs, spices, and tangy pickled jalapeno peppers.
Kidney beans, yellow onion, carrot, celery, roasted garlic, cilantro, dried chilis, tomato, herbs, spices, jalapeno peppers, red onion, white wine vinegar, fennel.
It is good and hearty, but maybe it use a little more/varied flavor to liven it up. I did enjoy it, and made a topping of cottage cheese which was great.
