A Lebanese holiday feast! Chicken spiced with dukkah and za'atar is served with mint rice, a winter cauliflower tabouli, grapefruit, mint, and feta salad, and a side of loaded hummus with Lebanese pita.
Dukkah & Za'atar Spiced Chicken (chicken, za'atar, extra virgin olive oil, lemon, dukkah (hazelnuts, coriander, cumin, cayenne, salt, sesame seeds), salt, pepper)
Mint Rice (rice, salt, dried mint)
Winter Cauliflower Tabouli (cauliflower, parsley, fennel, green onion, walnuts, pomegranate, extra virgin olive oil, lemon, salt, pepper, dried mint)
Grapefruit, Mint, and Feta Salad (spinach, grapefruit, mint, feta)
Balsamic Vinaigrette (balsamic vinegar, extra virgin olive oil, salt, pepper)
Loaded Hummus (hummus (garbanzo beans, tahini, lemon juice, garlic, salt), tomatoes, garbanzo bean, kalamata olives, parsley, sumac, extra virgin olive oil)

This was a fresh and flavorful meal. Nice with so much heavy eating lately! It would have been great to have stems off the spinach but the fresh mint and grapefruit without a single membrane was perfect. Amazing hummus. The chicken was quite dry and the salmon went first, which is not typical. Our quantity for 60 was perfect. .
