A Lebanese holiday feast! Salmon baked with a creamy taratour sauce is served with mint rice, a winter cauliflower tabouli, grapefruit, mint, and feta salad, and a side of loaded hummus with Lebanese pita.
Salmon with Taratour Parsley Sauce (salmon, salt, pepper, lemon, tahini, garlic, parsley)
Mint Rice (rice, salt, dried mint)
Winter Cauliflower Tabouli (cauliflower, parsley, fennel, green onion, walnuts, pomegranate, extra virgin olive oil, lemon, salt, pepper, dried mint)
Grapefruit, Mint, and Feta Salad (spinach, grapefruit, mint, feta)
Balsamic Vinaigrette (balsamic vinegar, extra virgin olive oil, salt, pepper)
Loaded Hummus (hummus (garbanzo beans, tahini, lemon juice, garlic, salt), tomatoes, garbanzo bean, kalamata olives, parsley, sumac, extra virgin olive oil)

This was a fresh and flavorful meal. Nice with so much heavy eating lately! It would have been great to have stems off the spinach but the fresh mint and grapefruit without a single membrane was perfect. Amazing hummus. The chicken was quite dry and the salmon went first, which is not typical. Our quantity for 60 was perfect. .
