Description

Pan seared lentil and tofu cake with sautéed onions and cilantro. Served with my signature tomato chutney, mashed potatoes and roasted broccoli. A delicious and creative vegetarian entree!

Ingredients

lentil and tofu cakes (green lentil, onion, garlic, cilantro, cumin, tofu, bread crumbs), tomato chutney (tomato, onion, fennel seeds, cumin, bay leaf, apple cider, vinegar, brown sugar, salt, cinnamon), mashed potatoes (potatoes, cream, butter), roasted broccoli (broccoli, olive oil, salt, pepper)

Love the lentil cakes with the yummy sauce. The sides could be more flavorful though.

Contrary to another comment, I found the cakes packed with flavor, even bites without the delicious chutney. Nice asstmt of vegetables, but the tiny carrots were lifeless.

Love this dish. Both times I've had it so far, the vegetables and cakes are fantastic and well seasoned. The chutney is incredible and gives some much needed sweetness and brightness to the earthy cakes.

The one miss is the rice - I'm not sure why it's even included, as it isn't a great complement to either the cakes or veggies. Plus, both times it was underseasoned and very bland/plain. Perhaps if there was extra chutney, it would help make the rice more palettable. Otherwise, would love to see this swapped out with something else.

We're not vegetarians, but sometimes we pretend to be - my husband thought the dish is bland, but the vegetables are good. He ate the whole dish.
