Build your own poke bowl with fresh sushi-grade ahi and all the mix-ins, toppings and sauces!

Ingredients

The poke was great! The portions were a little strange when it came to dishing everything out. We ended up have extra of the rice and salad and ran out of the toppings

This is pretty fail-safe. Really glad for compostable bowls (they were compostable, weren't they? That matters!) Need 2 less full pans of rice- had 3 and 1 per line is enough. Had too much tofu, need 1/2 pan less (quantity down to 30 for tofu). Also had a lot of extra seaweed, onions and wontons, so we can ease up a bit on quantities. Yummy shortbread butter cookies.

We ran out of salmon pretty fast so would up that by 5 for next time, to 45. We could have had more poke too but of the two fishes it was less popular. The chicken was a little dry. The mango was strangely kind of flavorless not tangy and bright as is more typical, and didn't seem as fresh. Quantities on everything else seemed spot on.

Neither the tofu nor the ahi showed up until 12:20 or so, on a second delivery, even though I got a note that my order was enroute at 11:11 (for the first delivery). By the time it arrived, I had already placed an order at Homegrown for the vegetarians and the pregnant woman I was supplying food for, because they were all in the all-hands meeting, and couldn't leave the meeting to go make themselves food -- but I had to leave the meeting to go downstairs and get the Homegrown order. This was disruptive to me (because the meeting was germane to me, and disruptive to the meeting). The delivery person was extremely apologetic and very nice, but it didn't solve my problem -- if the order had arrived closer in time to the planned time (11:30-45), then it's possible it could have been fixed before the noon meeting, which is why I ask for that timeslot.
