Hearty and comforting, creamy pumpkin, chicken and peas are bathed in an aromatic green curry sauce. Served with purple rice and a side of nutty Thai peanut slaw.
Pumpkin and Chicken Green Curry (chicken, green curry paste (fresh chili pepper, garlic, ginger root, shallot, lemongrass, salt, sweet basil, kaffir lime, sugar, coriander seed, pepper, cumin, cardamom, turmeric, galangal) coconut milk, pumpkin, peas, fish sauce, sugar, canola oil)
Purple Rice (black rice, white rice)
Thai Peanut Slaw (Napa cabbage, carrot, radish, green onion, rice wine vinegar, lime juice, sugar, peanuts)
A simple meal (3 chafers on ea line) and slaw had big chunks of cabbage but flavors were fabulous and the meal was well received. Adding a bit more color, like a red and even more peas into the green curry sauces would have been more visually pleasing but they tasted delicious. Better served in bowls next time. PERFECT AMOUNT!!!
