An East meets West salad with fresh bok choy, nappa cabbage and lettuce. Topped with tofu and crispy noodles, this fusion salad is perfect for a hot summer day! Enjoy with a mint dressing tossed in to brighten up the salad and your day!

Ingredients

tofu (tofu, garlic, olive oil, paprika, black pepper, bell peppers, parsley), mixed greens (bok choy, napa cabbage, lettuce), dressing (rice vinegar, lime juice, mint, garlic, brown sugar, salt, canola oil), crispy noodles (enriched flour, salt, cornstarch, soybean oil), rice vermicelli noodles (rice starch, water)

We had a ton of left overs today and the feedback from the team was that they didn't love lunch. They would like more toppings for noodle bowls. They did however LOVE the crispy wontons.
